Low Sugar life: Mug cake

 

So you might have heard about my low-sugar life after my ketogenic weightloss. but, I do still have cravings for baked foods, hence my attempt at almond bread.

I don't have the worst temper in the world but it does boil hot when I'm ticked off. Anger is not always a bad thing when it pushes you to demand more out of life and expect more for yourself. Anger is energy. You just need to channel it right as I am learning to do (after the steam clears from my ears). And so that was how someone sold me some bread mixed with oats flour and called it coconut bread. And then another seller delivered a stale loaf of coconut bread to me! I got so angry that I baked my own loaf 😂. (So all this is because of bread? 🙈) Honestly before now I've been trying so hard to get this low carb recipe right but I always ended up with something either too eggy or too mayonaisse-y. 😁 Until I stumbled on @fatforweightloss' recipe for almond bread. It turned out so good that I forgot to take a picture before I dug into it. But you can see what is left of it right beside the coconut one. Talk about yummy, sugar-free and guilt-free bread! 🤗 Now I just have to get angry enough to start growing my own lemons 🙂 #breakfastisserved☕️ #themumzone

So I found another recipe for Mug Cake, which I’m going to try to do without  microwave seeing as I don’t want to microwave anymore. Let me know how yours turns out.

DIY 1 MINUTE MICROWAVE CHOCOLATE CAKE (sugar free)
Ingredients

Chocolate Cake

1 egg

2 tablespoons unsweetened almond milk

1/2 teaspoon liquid chocolate

2 tablespoons unsweetened cocoa powder

1/4 teaspoon baking powder

Dash of salt

 

Chocolate syrup

1 tablespoon unsweetened cocoa powder

1/2 tablespoon coconut oil melted

1 tablespoon water

Top with whipped cream or dairy free whipped cream!

Instructions

Whisk chocolate cake ingredients together and pour into a ramekin or mug.

Microwave for 1 minute (may need 20 seconds extra depending on your microwave.) Or Bake at 350 degrees for 10 minutes or until a toothpick in center comes out clean.

Mix chocolate syrup ingredients in small bowl and pour over cake or on some Dairy Free Whipped Cream!
